Avocado and Greens Salad with a Lemon Balm Vinagrette

Yesterday I took home a haul of green when we finished work, and it wasn’t of the monetary variety. Oh no, it was MUCH better than that. We’re talking tender lovin’ salad greens, spring onions, marjoram, and the real star: LEMON BALM!!!

Trust me, this is something to get excited about. Lemon Balm may look like an innocent green leaf, but taste it and you’ll be blown away by it’s intense lemony flavor and clean taste. If some magical being solidified the sun into an edible package, it would be lemon balm. Flip suggested I mince it up into a dressing for a salad, so mince and dress I did!

Lemon Balm Vinaigrette over Greens and Avocado

The Salad:

A couple large handfuls of greens (I used a mix of spinach and sorrel)

1 avocado, diced

The Dressing:

1 tbsp minced Lemon Balm (Mint would also be delicious!)

1/4 cup Olive Oil

1 tbsp Lemon Juice

1 tbsp Apple Cider Vinegar

Salt & Pepper to taste

Arrange your greens and avocado in a serving bowl and drizzle dressing on top tight before serving. Enjoy!
